Ingredients:
1/2 cup butter
1/2 cup no-sugar added peanut butter (the kind that is 100% peanuts)
3/4 cup granulated erythritol
1 cup unsweetened, shredded coconut
3/4 cup peanuts
1 tsp. vanilla
pinch of sea salt
Place the butter, peanut butter and sweetener in a medium saucepan over medium heat.
Bring to a low boil, whisking the whole time to ensure the peanut butter and erythritol become smooth.
Remove from heat and add remaining ingredients. Mix well.
Drop by spoonful on parchment paper.
Let cool and harden.
Store at room temperature or in the fridge.
