Mint-Chocolate Chip Bars (Keto Friendly, Gut-Friendly!)

This recipe uses collagen powder. It's becoming more and more common to find it in the health sections of major grocery stores. Click this link to learn more about the health benefits of collagen. If you don't like mint, you can use regular sugar-free chocolate chips, plain stevia drops and vanilla extract instead.

  • 3 eggs, room temperature

  • 6 Tbsp. butter, melted and cooled

  • 1 cup sugar-free mint chocolate chips + a handful for sprinkling on top (I used the Lily's Brand- found on Amazon, Wal-Mart, or at Health Food Stores)

  • 1/4 cup unsweetened almond butter

  • 1/4 cup cocoa powder

  • 3 scoops unflavored collagen powder (I used Ancient Nutrition by Dr. Axe- found on Amazon, but any collagen powder will work- you can usually find it at major grocery stores)

  • 1/2 granulated sweetener (like erythritol, monk fruit, etc. I used Allulose- found at my local grocery store)

  • 1/2 tsp. baking powder

  • 1/2 tsp. sea salt

  • 2 tsp. mint flavored stevia drops (found on Amazon- alternatively, increase the sweetener to 1 cup and add 1 tsp of mint extract)

  1. Preheat the oven to 350.

  2. Cover a 9x9 baking dish with parchment paper. Or spray with non-stick spray.

  3. In a small bowl, stir together cocoa powder, salt, baking powder and collagen powder. Set aside.

  4. Melt the chocolate chips and almond butter. Microwave for one minute, stir. Microwave for another 30 seconds, stir. Repeat until all the chips are melted and the mixture is smooth. Add the granulated sweetener and beat until fully incorporated. Set aside to cool for a couple of minutes.

  5. In a separate bowl, beat the eggs until foamy. Add the melted, cooled butter a little bit at a time, beating in between as to temper the mixture. Add the stevia drops (or mint extract), briefly beat again and set aside.

  6. Add the egg mixture, a little bit at a time, to the chocolate mixture, beating as you go until it's fully combined.

  7. Repeat by adding the collagen and cocoa powder mixture.

  8. Pour batter into the baking dish.

  9. Sprinkle more chocolate chips on top, if desired.

  10. Bake for about 35 minutes. If a toothpick doesn't come out totally clean, that's ok- it'll be extra fudgy. Or bake for a few minutes longer if you'd like.

  11. Cool for at least 20 minutes before attempting to cut.

  13. Best if stored in the fridge.
