Apple Upside Down Spice Cake


Cake Ingredients:

DRY INGREDIENTS:

  • 1-1/2 cups almond flour

  • 1/2 cup coconut flour

  • 1 Tbsp. baking powder

  • 2 tsp. ginger

  • 1/4 tsp. nutmeg

  • 1/4 tsp. cloves

  • 2 tsp. cinnamon

  • 1/4 tsp. xantham gum

  • 1/2 tsp. salt

WET INGREDIENTS:

  • 9 Tbsp. softened butter

  • 3 eggs, room temperature

  • 3/4 cup heavy cream

  • 2 tsp. vanilla extract

  • 1/2 cup brown sugar sweetener (i.e. Brown Swerve)

Apple Ingredients:

  • 2 medium apples, peeled and thinly sliced

  • 8 Tbsp. butter

  • 1/2 cup brown sugar sweetener

  • 1/4 tsp. vanilla

  • 1/2 tsp cinnamon


  1. Prepare a round 9 in. cake pan by tracing the bottom circle onto parchment paper. Cut the circle out and place in the bottom of the pan. Spray the sides with non-stick spray.

  2. Preheat the oven to 350.

  3. Prepare the apple layer first. Place the apples in an even layer onto the parchment circle in the pan. Then brown the butter in a saucepan over medium heat. Add the sweetener. Remove from heat. Add in the vanilla and cinnamon. Whisk this mixture until smooth. Pour over the apple layer.

  4. Then prepare the cake batter. Stir all dry ingredients in a mixing bowl.

  5. In a large mixing bowl, beat the butter and cream from the wet ingredients until smooth. Then beat in the remaining wet ingredients.

  6. Add a little bit of the flour mixture to the wet mixture at a time until fully incorporated. The batter will be thick.

  7. Spread batter over the apple layer.

  8. Bake for 45 minutes, or until toothpick comes out clean.

  9. Let cool for at least 30 minutes.

  10. Take a butter knife and run it around the sides of the pan to loosen the cake.

  11. Put a plate or serving platter of your choice over the top of the pan and carefully flip it over so the apple layer faces up and the cake comes out of the pan. Peel off the parchment circle from the apple layer if it stuck.

  12. This cake is good both at room temp and cold. It will be more firm and last longer if kept in the fridge but will be softer and keep longer if it stays at room temp- it's totally your preference!

*NOTE- Apples are not considered Keto friendly because of the natural sugar content in them. Everything else in this recipe IS okay for keto.
