Peanut Butter "Kiss" Cookies

These are like the traditional chocolate kiss cookies, but sugar-free style!


Ingredients:

  • 1 cup natural, no-sugar added peanut butter

  • 1/4 cup granulated sweetener (like Pyure or granulated xylitol)

  • 1 egg

  • 1 tsp. vanilla extract

  • 1/4 tsp. salt

  • 1/4 cup (or handful) of sugar-free chocolate chips (like Lily's)


  1. Preheat oven to 350.

  2. Beat everything together (minus chocolate chips).

  3. Roll dough into tablespoon size balls. (Optional- roll each ball in additional granulated sweetener)

  4. Place evenly on a cookie sheet lined with parchment paper.

  5. Press 2 chocolate chips into middle of each ball.

  6. Bake for 10 minutes.

  7. Let cool completely on the pan.

  8. Store in fridge.
