Ingredients:
1/2 cup peanut butter
2 Tbsp. coconut oil
1/2 cup granular erythritol
15 drops of Vanilla Creme Sweet Drops (this is optional- you could alternatively add 1 tsp. vanilla extract)
2 eggs
1/2 tsp. baking soda
1/4 tsp. sea salt
1/2 cup coconut flour
1/2 cup sugar-free chocolate chips (I used Lily's milk chocolate chips)
Preheat the oven to 350.
Melt the peanut butter and coconut oil in the microwave for 40-50 seconds. Blend with a beater until smooth.
Add the sweetener, beat again.
Add the sweet drops and/or vanilla, eggs, baking soda, and salt. Beat until smooth.
Add the coconut flour and beat once more.
Fold in the chocolate chips.
Form 1 inch balls and evenly place them on a baking sheet lined with parchment paper.
Bake for 7-8 minutes.
Let cool on the pan for at least 3 minutes before transferring off to cool.
Store at room temperature.
