Peanut Butter Chocolate Chip Cookies

Ingredients:

  • 1/2 cup peanut butter

  • 2 Tbsp. coconut oil

  • 1/2 cup granular erythritol

  • 15 drops of Vanilla Creme Sweet Drops (this is optional- you could alternatively add 1 tsp. vanilla extract)

  • 2 eggs

  • 1/2 tsp. baking soda

  • 1/4 tsp. sea salt

  • 1/2 cup coconut flour

  • 1/2 cup sugar-free chocolate chips (I used Lily's milk chocolate chips)


  1. Preheat the oven to 350.

  2. Melt the peanut butter and coconut oil in the microwave for 40-50 seconds. Blend with a beater until smooth.

  3. Add the sweetener, beat again.

  4. Add the sweet drops and/or vanilla, eggs, baking soda, and salt. Beat until smooth.

  5. Add the coconut flour and beat once more.

  6. Fold in the chocolate chips.

  7. Form 1 inch balls and evenly place them on a baking sheet lined with parchment paper.

  8. Bake for 7-8 minutes.

  9. Let cool on the pan for at least 3 minutes before transferring off to cool.

  10. Store at room temperature.
