Lemon Chocolate Chip Mug Cake

Lemon and chocolate don't *seem* like they would go together well, but the tart sweetness from the lemon and the richness from the chocolate make a great match!


Ingredients:

  • 2 Tbsp. almond flour

  • 1 Tbsp. coconut flour

  • 1 egg

  • 2 Tbsp. coconut oil

  • 1/4 cup ricotta cheese

  • 2 Tbsp. powdered erythritol (like confectioners Swerve or So Nourished)

  • 1/2 tsp. lemon extract

  • pinch of salt

  • 2 Tbsp. sugar-free chocolate chips (like Lily's)


  1. Melt the coconut oil in a mug.

  2. Add the ricotta cheese and stir well.

  3. Crack the egg into the mug and combine well.

  4. Add the sweetener and mix again.

  5. Add remaining ingredients.

  6. Microwave for 2 minutes.

  7. Let sit/cool for 2 minutes.

  8. Top with whipped cream if desired!
