Lemon and chocolate don't *seem* like they would go together well, but the tart sweetness from the lemon and the richness from the chocolate make a great match!
Ingredients:
2 Tbsp. almond flour
1 Tbsp. coconut flour
1 egg
2 Tbsp. coconut oil
1/4 cup ricotta cheese
2 Tbsp. powdered erythritol (like confectioners Swerve or So Nourished)
1/2 tsp. lemon extract
pinch of salt
2 Tbsp. sugar-free chocolate chips (like Lily's)
Melt the coconut oil in a mug.
Add the ricotta cheese and stir well.
Crack the egg into the mug and combine well.
Add the sweetener and mix again.
Add remaining ingredients.
Microwave for 2 minutes.
Let sit/cool for 2 minutes.
Top with whipped cream if desired!
