I love lemon poppy seed anything. Chia seeds are a fun, healthy replacement and give nearly the same texture and feel. But of course, feel free to still use poppy seeds- they'll still turn out great!
Ingredients:
1-2/3 cup almond flour
1/3 cup coconut flour
1/4 tsp. salt
1/2 tsp. baking soda
1/4 tsp. xantham gum
3/4 cup powdered erythritol (Swerve works well)
3 eggs
1/4 cup melted coconut oil
Juice of one lemon
Zest of one lemon
1 tsp. almond extract
2 tsp. lemon extract
1/3 cup unsweetened almond milk
2 tbsp. chia seeds
Preheat oven to 350.
Mix all dry ingredients together.
Beat eggs, lemon juice, lemon zest, flavor extracts and almond milk in a separate bowl.
Combine wet and dry ingredients well.
Stir in coconut oil. (if you add this to cold eggs and milk in step 2 it will chunk up)
Fold in chia seeds at the last minute.
Divide batter among muffin tins.
Bake for 18 minutes, or until the tops just slightly begin to brown and toothpick comes out clean.
Cool completely and then store in fridge.
