Keto Hot Pockets!

This recipe is very versatile...you could virtually stuff anything into this dough that your heart desired. I used to love ham and cheese hot pockets growing up- so I added chopped nitrate-free deli ham, shredded cheddar and broccoli! But you could make pizza pockets, breakfast pockets, etc., etc.! They can also be considered as use to make empanadas!


I do have to say the dough is a little tricky to work with. When I made it, I separated the dough into 4 servings as directed. But I found that the fragility of the dough didn't allow me to stuff very much filling inside of the pockets without completely falling apart.


So when I make this again, I will form the batch it into only 1 or 2 pockets so then I can add more filling and the dough is more stable to work with.


Hint: Brushing an egg wash and sprinkling the tops with parmesan cheese helps the tops to become crispy.
