Reminiscent of french toast- make ahead for the week and grab a couple on the go for breakfast or a snack!
Makes 12 muffins
Ingredients:
8 eggs
1 block of cream cheese
3 tsp. cinnamon
1 tsp. baking powder
1/4 cup sugar-free maple syrup (optional)
Preheat the oven to 400.
Soften the cream cheese, or let sit out to room temperature
Blend all ingredients in a blender.
Pour mixture into 12 muffin cups (I find using parchment paper muffin liners work the best)
Bake for 18 minutes.
Serve hot with more syrup, if desired.
