Cinnamon Egg Muffins

Reminiscent of french toast- make ahead for the week and grab a couple on the go for breakfast or a snack!


Makes 12 muffins


Ingredients:

  • 8 eggs

  • 1 block of cream cheese

  • 3 tsp. cinnamon

  • 1 tsp. baking powder

  • 1/4 cup sugar-free maple syrup (optional)


  1. Preheat the oven to 400.

  2. Soften the cream cheese, or let sit out to room temperature

  3. Blend all ingredients in a blender.

  4. Pour mixture into 12 muffin cups (I find using parchment paper muffin liners work the best)

  5. Bake for 18 minutes.

  6. Serve hot with more syrup, if desired.
