Keto Berry Cream Pie

Takes a bit of time due to the crust layer, but this is a sweet and refreshing dessert to have especially when berries are in season! Even non-low carb eaters love this!


Crust:

Find recipe and directions at Leelalicious

(I find using cold butter instead of coconut oil works best, and be sure to lightly wrap the edges in tinfoil while baking to avoid burning)


Filling:

  • 1 box of sugar-free jello (berry flavor- I used raspberry)

  • 1 block of cream cheese, softened

  • 1 cup heavy whipping cream

  • 1/4 cup powdered erythritol

  • 3/4 cup roughly chopped berries of choice (I used blackberries)


  1. Prepare the crust. Let cool completely.

  2. Beat heavy whipping cream until stiff peaks form.

  3. Beat together softened cream cheese with jello powder and erythritol in a separate bowl.

  4. Fold in the whipped cream until well combined.

  5. Fold in chopped berries.

  6. Spread mixture over the crust.

  7. Let set at least 2 hours in fridge before serving

  8. Store in fridge.
