Instant Soft-Serve Blueberry Ice Cream


Ingredients:

  • 4 cups frozen blueberries

  • 1 cup unsweetened almond milk

  • 1 cup heavy whipping cream

  • 2/3 cup granulated sweetener, like xylitol (like NOW Foods Xylitol)


  1. Place all ingredients in a food processor or high powered blender (I use a Ninja).

  2. Blend until smooth.

  3. Enjoy!

  4. Storing this in the freezer will change the texture, but the fat content of the heavy whipping will still allow it to be ice-cream-like and not turn to ice. Just let it thaw a while before you eat (like you have to do with Halo Top Ice Cream).
