Grilled Veggie and Bacon Flatbread

I often like to copycat menu items from my favorite restaurants, but reinvent them keto-style! This one is inspired from the Vestito Di Bianco from Herb and Fire. This one is sure to impress dinner guests.


Ingredients:

  • 1 prepared recipe of Naan Bread (found on Wholesome Yum)

  • 1 prepared recipe of White Garlic Pizza Sauce (found here)

  • 1/2 zucchini, cut into thin medallions

  • 1/2 small red onion, thinly sliced

  • 2 roma tomatoes, sliced into thin medallions

  • 2 cups fresh spinach

  • 6 slices of crispy bacon, crumbled

  • 1/2 cup petite mozzarella pearls (or just shredded mozzarella)


  1. Preheat the oven to 350.

  2. Toss the veggies with a small amount of olive oil and sea salt, then grill them until softened.

  3. Wilt the spinach in a saute pan with a drizzle of olive oil.

  4. Spread white garlic pizza sauce on top of each naan bread.

  5. Arrange the grilled veggies, bacon and mozzarella pearls on top of that.

  6. Bake at 350 until warmed through and melted, about 12 minutes.
