Gooey Chocolate Mug Cake

Often mug cakes end up tasting bland and like rubbery egg- eww. This one uses no egg! It's kind of cake, kind of like gooey fudge- but satisfies a chocolate craving in minutes without feeling the guilt! This cake sort of reminds me of a molten lava cake with the fudge seeping out the middle.


Serves 1


Ingredients:

  • 1 Tbsp. coconut flour

  • 2 Tbsp. powdered erythritol (I use this)

  • 2 Tbsp. cocoa powder (this is my favorite)

  • Pinch of salt

  • 1 Tbsp. almond butter (or other nut butter)

  • 1 tsp. vanilla extract

  • 3 Tbsp. pumpkin puree

  • 3 Tbsp. unsweetened almond milk (or any milk of choice- you could even use cream)

  1. Spray non-stick spray in a mug or small microwavable bowl. Combine all of the dry ingredients and stir.

  2. Add the remaining ingredients and mix well.

  3. Microwave 2 minutes. Take out and stir. Heat another minute.

  4. This will not become spongy like cake due to the absence of egg. After you take it out of the microwave it will seem very gooey still. Just look for the mixture to have stiffened up and dried out a little bit. Because there is no baking powder either- the "dough" will not rise. But trust the process. The heat will make it like a gooey and fudgy consistency! Plus there's no raw egg or any ingredients that are required to be "cooked through" in order to consume.

  5. Top with whipped cream and chocolate chips if desired! (I use these)
