Easy peasy! Make to enjoy alone or as a dip for fruit or topping for cupcakes!
Ingredients:
1 can of full-fat coconut milk
1 tsp vanilla extract
2 tbsp. sweetener (optional)
Let the can of coconut milk sit in the fridge overnight.
Scoop just the solid cream layer into a bowl. Use the liquid for another recipe or discard.
Add sweetener and vanilla.
Beat, beat, beat! Then beat some more until the mixture stiffens up enough to your liking.
Use immediately or store for a day in the fridge. This will lose stiffness and texture the longer it goes unused. If you're using it to frost a baked good, make it at the last minute and top immediately before serving.
