Cocoa Dusted Toasted Walnuts

Have you ever seen the cocoa almonds in the store? These are my take on them, but with walnuts and without the sugar! They have a rich, dark chocolate taste without being super sweet.


Ingredients:

  • 1 Tbsp. coconut oil

  • 2 cups raw walnuts

  • 2 Tbsp. powdered erythritol (more if you want them to be sweet tasting)

  • 2 Tbsp. cocoa powder

  • Pinch of sea salt

  1. Melt the coconut oil in a medium saute pan.

  2. Add the walnuts. Stir until they are coated.

  3. Add the salt. Continue stirring every 30 seconds or so on medium heat until the walnuts are toasted (about 5 minutes).

  4. Pour the walnuts into a mixing bowl and add the cocoa powder and sweetener. Stir well until everything is coated and mixed.

  5. Spread walnuts out on parchment paper or paper towel to cool and set.

  6. Store in an airtight container at room temperature for up to a week.
