Healthy fats. Nice protein. Good fiber. Great make-ahead snack or breakfast!
Makes about 18 regular sized granola bars
Ingredients:
1/2 cup raw almonds, chopped and toasted
1 cup raw walnuts, chopped and toasted
2 cups unsweetened coconut flakes, toasted
1/2 cup raw sunflower seeds
1/3 cup shelled hemp seeds
1/3 cup chia seeds
2 tsp. cinnamon
1/4 tsp. sea salt
1/2 cup unsweetened almond butter
1/4 cup coconut oil
1/2 cup sugar-free sticky sweetener like Choco Zero Syrup (any flavor will work, I used vanilla!)
1/2 cup powdered erythritol (Like So Nourished)
Mix all the nuts, seeds, coconut, cinnamon and salt in a large bowl.
Melt the coconut oil, almond butter and sticky sweetener in the microwave for 20 seconds, then stir. Heat another 20 seconds and stir. Repeat until the mixture is very smooth.
Pour the syrup mixture over the nut mixture and stir to combine and coat well.
Pour it all on top of a cookie sheet lined with parchment paper. Form into a rectangle that's the thickness you desire the granola bars to be.
Freeze for 30 minutes.
Cut into bars.
Store in fridge.
