Caramel Nut Clusters

Ingredients:

  • 1 cup chopped nuts (I used walnuts and almonds)

  • 3 Tbsp. butter

  • 1/4 cup heavy whipping cream

  • 2 Tbsp. brown Swerve (or powdered erythritol)

  • 1 tsp. vanilla

  • pinch of sea salt

  • 4 Tbsp. sugar-free chocolate chips (like Lily's)

  • 1 tsp. coconut oil


  1. Melt the butter in a saucepan. Whisk until it's browned and frothy.

  2. Add the cream, whisk until combined.

  3. Add the sweetener and salt. Whisk until it's dissolved and let simmer on low for 5 minutes.

  4. Add the vanilla, stir.

  5. Add the chopped nuts, stir until coated.

  6. Drop by tablespoon on a parchment paper lined plate.

  7. Freeze for 5 minutes.

  8. Melt the chocolate chips and coconut oil in the microwave. Drizzle over the clusters.

  9. Store in freezer or fridge.
