Ingredients:
1/2 cup coconut flour
1/3 cup oat fiber (not the same as oatmeal)
1/2 cup ground flaxseed
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. sea salt
2 tsp. cinnamon
3 eggs
1/2 cup butter, softened
1/2 cup unsweetened almond milk
2 tsp. vanilla
1 cup powdered erythritol
Optional: chopped nuts of choice
Preheat oven to 350.
Mix all dry ingredients (coconut flour, oat fiber, flax, baking powder, baking soda, salt, cinnamon)
Beat together the eggs, butter, almond milk, vanilla and sweetener.
Incorporate the dry mixture into the wet mixture and mix well.
Divide batter among 12 muffin cups.
Bake for 23-25 minutes, or until toothpick comes out clean.
