Ok, these are actually chocolate chip cookies. But with the added collagen you can give your skin a little mini-beauty boost, minus the botox-(not to mention some bonus protein and many other health benefits- read more here). These are soft, chewy in the middle and crisp on the outside- the texture is as legit to a traditional chocolate chip cookie as I can get (after umpteen revisions, this one made the cut!)
Ingredients:
1/2 cup butter, softened
2 eggs
2 tsp. vanilla extract
1/4 tsp. almond extract (optional- you won't taste the almond- it just helps bring out the flavor)
3/4 cup brown sugar erythritol (I used Sukrin Gold, but Swerve would also work)
3/4 cup almond flour
1/4 cup + 2 Tbsp. coconut flour
1/2 cup unflavored collagen peptides powder
1 Tbsp. baking powder
1 tsp. baking soda
1/2 tsp. sea salt
1/2 cup sugar-free chocolate chips
Beat the eggs, butter, sweetener, vanilla extract and almond extract with an electric mixer until smooth.
Stir remaining dry ingredients together in a separate bowl (minus the chocolate chips).
Add the wet to the dry and beat until fully incorporated.
Fold in the chocolate chips.
Wrap the dough in parchment paper and freeze the dough for 20 minutes.
Preheat oven to 350.
Form the dough into small balls (about ping-pong ball size) and lay-out evenly on a baking sheet lined with parchment paper.
Bake for 15 minutes, or until slightly browned.
Cool for 5 minutes on pan before transferring to a wire rack.
Completely cool for another 20+ minutes. As these cookies cool and sit at room temperature, they will firm up to the perfect texture.
Store in an airtight container.
