Don't let the word "flax" throw you off. There's such a small amount that it doesn't affect the flavor! Consider the fact it helps make these feel less sinful.
Ingredients:
2 tbsp. coconut flour
1 cup almond flour
1 cup powdered erythritol (like this one)
1 tbsp. ground flax seeds
2-1/2 tbsp. water
1/2 cup unsweetened natural almond butter
4 tbsp. unsweetened almond milk
1 tsp. vanilla extract
1/4 tsp. almond extract
1/2 cup sugar-free chocolate chips (these are my favorite)
Preheat oven to 350.
Make a "flax egg" by mixing the flax seeds and water together. Let sit for 15 minutes to thicken to a gel. Optional: replace the flax and water with one egg.
Stir together all dry ingredients.
Beat together together all wet ingredients in a separate bowl (including almond butter and flax egg or regular egg).
Combine everything together until well incorporated. Fold in chocolate chips after that.
Pour into an 8x8 pan lined with parchment paper.
Bake for 22-25 minutes.
Cool for at least 20 minutes before cutting.
Store in fridge.
