Veggie Breakfast Bake

Versatile, customizable, healthy!


Ingredients:

  • Chopped veggies of choice (I love asparagus, summer squash, onion, mushrooms, peppers, etc)

  • Avocado, cut into small chunks

  • Optional: cooked sausage or bacon crumbles and/or shredded cheese

  • Coconut oil for sauteing

  • Seasoning of choice (garlic powder, onion powder, sea salt, pepper, etc.)

  • Eggs


  1. Saute veggies in coconut oil and seasoning until softened.

  2. Stir in meat and/or cheese, if using.

  3. Pour mixture into small baking dish.

  4. Top with avocado chunks.

  5. Crack the amount of eggs you want on top.

  6. Bake at 350 (or broil on low) until eggs are cooked to your preference.

  7. Other option: Fry eggs separately and serve on top of cooked veggies.

  8. Top with chopped green onions or other herbs if desired.
