Is it Mexican? Tex-Mex? American? All 3?
Ingredients:
1-1/2 lbs. skinless, boneless chicken, cooked and chopped (I seasoned mine with sea salt, cumin, chipotle pepper and chili powder)
3 cups chicken broth
1 can diced chilies
1 bell pepper
1/2 red onion
3/4 cup salsa
2 tsp. minced garlic
1/2 tsp. cumin
1/8 tsp. chipotle pepper
1 tsp. onion powder
1/2 tsp. smoked seasoned salt (or sea salt)
2 Tbsp. chopped, fresh cilantro
2 cups shredded monterey jack cheese
Combine all ingredients in a slow-cooker.
Cook on low for 8 hours, or on high for 4.
During the last 30 minutes, add in 2 cups of cheese and let melt. Stir to combine.
Top with avocado, cilantro or sour cream.
