Twisted Chicken Chili

Is it Mexican? Tex-Mex? American? All 3?


Ingredients:

  • 1-1/2 lbs. skinless, boneless chicken, cooked and chopped (I seasoned mine with sea salt, cumin, chipotle pepper and chili powder)

  • 3 cups chicken broth

  • 1 can diced chilies

  • 1 bell pepper

  • 1/2 red onion

  • 3/4 cup salsa

  • 2 tsp. minced garlic

  • 1/2 tsp. cumin

  • 1/8 tsp. chipotle pepper

  • 1 tsp. onion powder

  • 1/2 tsp. smoked seasoned salt (or sea salt)

  • 2 Tbsp. chopped, fresh cilantro

  • 2 cups shredded monterey jack cheese


  1. Combine all ingredients in a slow-cooker.

  2. Cook on low for 8 hours, or on high for 4.

  3. During the last 30 minutes, add in 2 cups of cheese and let melt. Stir to combine.

  4. Top with avocado, cilantro or sour cream.

  5. Enjoy!
