No eggs, cream cheese or butter!
Ingredients:
2-1/2 cups blanched almond flour
1/2 cup coconut flour
1/3 cup ground flax
1/3 cup + 2 Tbsp. psyllium husk powder
1 Tbsp. baking powder
1 tsp. sea salt
1 tsp. dried italian herbs
2 Tbsp. fresh chopped herbs (chives, rosemary, basil, etc.- or use 2 tsp. dried)
1 tsp. dried, minced onion
1/2 tsp. garlic powder
2 Tbsp. avocado oil (or olive oil)
1 tsp. apple cider vinegar
2 cups warm water
Preheat oven to 400.
Line a loaf pan with parchment paper. Spray the parchment paper with nonstick spray or lightly brush some oil over it.
Mix all dry ingredients together.
Add the liquid ingredients.
Combine everything well.
Using your hands to knead the dough for 2 minutes- it will get less sticky as you go. If it remains stickier than play-dough, add a bit more psyllium husk powder.
Let the dough sit for 10 minutes.
Shape the dough into a loaf shape and place into the pan.
Do not press the top down- keep the top rounded.
Run your hands under water and shake off excess- then gently massage the surface of the dough to create a smooth texture- without pushing it down.
Bake for 50-55 minutes. Poke a toothpick in the dough to check for doneness. If the toothpick comes out "wet", lightly cover the top of the bread with tinfoil to avoid burning and continue to bake- checking every 5 minutes.
Lift the bread out using the parchment paper handles and let cool on a rack for several hours for best results.
Eat plain, toasted or with garlic and herb butter!
