My kids think the best thing about going on a long road trip is the snacks! But when you're doing low-carb and sugar/grain-free, finding acceptable food to bring along for yourself takes a bit more thought than just grabbing something from the gas station. The good news is that I'm finding that more and more gas stations are actually offering decent choices such as cheese sticks, salami/cheese plates, hard-boiled eggs, nuts, seeds, beef jerky, etc. However, when you're a bit picky about ingredients, it's not so easy. So here are a few options that are my go-to road trip snacks that I usually prep in advance or pick-up from a store before heading out on the road!
Hard-boiled eggs
Beef Jerky (there's only one brand I've found that has no gluten or sugar or sodium nitrate- see pic below)
Nuts/Seeds (macadamias, pistachios, almonds, walnuts, pepitas, pumpkin seeds, sunflower seeds- raw or salted, but check for no added oils)
Cut-up veggies (peppers, cucumbers, celery)
Sugar-Free suckers (sweetened with xylitol- found on Amazon or at a health food store)
Whisps (cheese crisps)
Coconut Wraps with almond butter or meat/cheese
Drinks- flavored water sweetened with Sweet Leaf Water Drops or Bai Beverages
