Cucumber, Pepper and Tomato Salad

My husband had a social event the other day and requested for me to make him a salad of sorts to go with pita chips. Now of course pita chips aren't part of my diet, but the salad (that serves as a dip as well) by itself is super light and refreshing for summer! It's great to bring as a side to a bbq or potluck. It reminds me of Texas Caviar, but without the beans and corn!


Just mix together:

  • 1 bell pepper (any color, finely chopped)

  • 1/2 of an English cucumber (finely chopped)

  • 1/2 pint of cherry tomatoes (cut in quarters)

  • 2 Tbsp. parsley, chopped

  • Juice of one lemon

  • 2 Tbsp. olive oil

  • salt/pepper to taste
