Radish, Bacon and Egg Bowl

I've heard that some people find that fried radishes taste like redskin potatoes. I haven't jumped onto that bandwagon. They're still radishes. However, sauteing them until they're crispy looking and browned do give them a nice flavor that works well with bacon and eggs! My local grocery store even carries pre-cut matchsticks- similar to shredded hash-brown shapes which is a convenient benefit- but you can slice your own just as well.


Serves 2


Ingredients:

  • 8 oz. radishes (thinly sliced or pre-cut matchsticks)

  • 2 Tbsp. butter

  • 1/2 tsp. garlic powder

  • 1/2 tsp. onion powder

  • 1/2 tsp. sea salt

  • 1/4 tsp. black pepper

  • 6 slices bacon, cooked and crumbled

  • 2 eggs

  1. Melt the butter in a saute pan.

  2. Add the radishes and seasoning.

  3. Fry on medium heat until they are browned and crispy looking, about 20 minutes. Stir frequently.

  4. Stir in bacon.

  5. Spray 2 ramekins or small baking dishes with nonstick spray.

  6. Divide the radish mixture among 2 dishes and create a "nest" with a hole in the middle for the egg.

  7. Crack an egg into the middle of each.

  8. Bake at 350 until the egg sets to your preference.

  9. Alternatively, fry an egg in a saute pan and serve on top of the radish mixture.

  10. Top with green onion, chives, avocado, sour cream, hot sauce, etc.
