I've heard that some people find that fried radishes taste like redskin potatoes. I haven't jumped onto that bandwagon. They're still radishes. However, sauteing them until they're crispy looking and browned do give them a nice flavor that works well with bacon and eggs! My local grocery store even carries pre-cut matchsticks- similar to shredded hash-brown shapes which is a convenient benefit- but you can slice your own just as well.
Serves 2
Ingredients:
8 oz. radishes (thinly sliced or pre-cut matchsticks)
2 Tbsp. butter
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. sea salt
1/4 tsp. black pepper
6 slices bacon, cooked and crumbled
2 eggs
Melt the butter in a saute pan.
Add the radishes and seasoning.
Fry on medium heat until they are browned and crispy looking, about 20 minutes. Stir frequently.
Stir in bacon.
Spray 2 ramekins or small baking dishes with nonstick spray.
Divide the radish mixture among 2 dishes and create a "nest" with a hole in the middle for the egg.
Crack an egg into the middle of each.
Bake at 350 until the egg sets to your preference.
Alternatively, fry an egg in a saute pan and serve on top of the radish mixture.
Top with green onion, chives, avocado, sour cream, hot sauce, etc.
