Poached Egg over Canadian Bacon and Spinach

This is sort of a take on Eggs Benedict...sort of. But a healthy and great meal either way!


Ingredients:

  • 1 cup of fresh spinach

  • 1/2 tbsp. butter

  • 2 slices of Canadian Bacon or sliced ham

  • Poached Egg (or fried egg)

  • Optional: hollandiase sauce (recipe found here)


1.) Saute spinach in melted butter (season with salt, pepper and garlic if desired). Put on a plate.

2.) Warm up bacon or ham (pan or microwave).

3.) Poach one egg- or fry one egg (see how to poach eggs here)

4.) Make hollandiase sauce.

5.) Place meat on top of spinach and then an egg on top of that!

6.) Drizzle with hollandiase.

7.) Enjoy!
