Of course you could make this sweet and smokey chili in a crock pot or on the stove as well.
Ingredients:
1 lb. cooked ground beef (or ground turkey)
2 cans of diced tomatoes (14.5 oz each)
1 can of tomato paste (12 oz)
1 can of beef broth
2 Tbsp. apple cider vinegar
2 bell peppers (any color), diced
1 small white onion, chopped
1 cup sugar-free bbq sauce (see below for the kind I used)
1 tsp. smoked paprika
1/4 tsp. chipotle chili pepper (less if you don't like a hint of heat or more if you like spicy)
1 tsp. smoked seasoning salt (see below for the kind I used)
3 tsp. bbq seasoning (see below for the kind I used)
1 tsp. garlic powder
2 Tbsp. chili powder
Optional: roasted poblano pepper, diced or a de-seeded and minced jalapeno
Combine all ingredients in the Insta-Pot.
Set on high for 15 minutes.
Top with your choice of shredded cheese, avocado, green onion, sour cream, etc.
