Jalepeno Popper Chicken Casserole

There's many versions of this recipe out there, here's mine :-)


Ingredients:

  • 1-1/2 lbs. of boneless, skinless chicken, cooked and chopped (I seasoned mine with smoked salt, smoked paprika and garlic powder)

  • 1/2 cup cooked bacon crumbles (plus 2 Tbsp. for topping)

  • 1/3 cup de-seeded, minced jalepenos (plus more, or reserve some, for topping)

  • 8 oz. cream cheese, softened

  • 1/4 cup mayonnaise

  • 1/2 cup sour cream

  • 1/2 cup shredded cheddar (plus 1/2 cup for topping)

  • 2 tsp. garlic powder

  • 1 tsp. onion powder

  • 1/2 tsp. smoked seasoned salt (or regular sea salt)

  1. Preheat oven to 350.

  2. Mix together all ingredients until fully combined.

  3. Pour into a baking dish (I used a 11x7).

  4. Sprinkle with more bacon, jalepenos and cheddar.

  5. Bake for 35 minutes.

  6. Top with cilantro, hot sauce or ranch if desired.

  7. Enjoy!

  8. Can be made a day ahead of time, just refrain from baking until you're ready to serve it.
