There's many versions of this recipe out there, here's mine :-)
Ingredients:
1-1/2 lbs. of boneless, skinless chicken, cooked and chopped (I seasoned mine with smoked salt, smoked paprika and garlic powder)
1/2 cup cooked bacon crumbles (plus 2 Tbsp. for topping)
1/3 cup de-seeded, minced jalepenos (plus more, or reserve some, for topping)
8 oz. cream cheese, softened
1/4 cup mayonnaise
1/2 cup sour cream
1/2 cup shredded cheddar (plus 1/2 cup for topping)
2 tsp. garlic powder
1 tsp. onion powder
1/2 tsp. smoked seasoned salt (or regular sea salt)
Preheat oven to 350.
Mix together all ingredients until fully combined.
Pour into a baking dish (I used a 11x7).
Sprinkle with more bacon, jalepenos and cheddar.
Bake for 35 minutes.
Top with cilantro, hot sauce or ranch if desired.
Enjoy!
Can be made a day ahead of time, just refrain from baking until you're ready to serve it.
