Grilled Chicken Salad Stuffed Avocados

Ingredients:

  • 3 boneless, skinless chicken breasts

  • Seasonings of choice (I used sea salt, pepper and poultry blend)

  • Ripe Avocados


For the dressing:

  • 1/2 cup mayonnaise

  • 1/4 cup sour cream or plain greek yogurt

  • 1/2 tsp. onion powder

  • 1/2 tsp. garlic powder

  • 1/4 tsp. sea salt (or 1/2 tsp. if your chicken doesn't have salt)

  • Dash of pepper

  • Herbs of choice....(I used chives, dill and parsley)

  • 2 ribs of celery, chopped

  • Optional: chopped green onion, sliced almonds or walnuts, quick splash of balsamic vinegar


  1. Season and grill the chicken. Let it cool and then chop it up into bite size pieces.

  2. Mix all the dressing ingredients.

  3. Fold dressing into the chicken.

  4. Let chill for at least 4-6 hours for flavors to blend.

  5. Slice avocados in half and remove the pit. Stuff each half with as much chicken salad as you'd like!
