Garlicky Pizza Puffs

Great appetizer or snack! Dip in pizza sauce, marinara or ranch.


Ingredients:

  • 2 cups shredded mozzarella cheese

  • 3 Tbsp. coconut flour (you won't taste it at all)

  • 1 tsp. garlic powder

  • 1/2 tsp. onion powder

  • 1/8 tsp. white pepper

  • Sea salt for topping

  • Optional: italian seasoning, basil, red pepper flakes, parmesan

  1. Preheat oven to 325.

  2. Mix the dry ingredients together in a small bowl.

  3. Melt the mozzarella in a separate microwave safe bowl for 1 minute. Stir.

  4. Melt for another 25-30 seconds until it's fully melted and easy-to-stir.

  5. Add the coconut flour and seasoning mixture to the cheese and stir quickly until it's evenly combined. You should be able to knead this with your hands if needed to fully incorporate the seasoning. It makes a nice dough to manipulate.

  6. Roll the dough out in between 2 pieces of parchment paper until about 1/8" thick.

  7. Cut with a knife or pizza cutter into desired shapes- squares, sticks, etc. Arrange them on a cookie sheet lined with parchment paper.

  8. Sprinkle sea salt (or more garlic powder) lightly on top of the dough pieces.

  9. Bake about 15 minutes, or until puffed up and golden brown.

  10. Serve immediately. You can store this at room temperature- just pop on low broil for a minute or two the next time you want to eat them.
