Everything Frittata

This dish is easy, yummy and super healthy! It's great for breakfast, lunch or dinner. The leftovers keep really well for up to a week so it's a great meal to prep ahead of time.


Serves 8


Ingredients:

  • 6-8 eggs

  • 3/4 cup shredded cheese (I used cheddar)

  • 4 tbsp. cream (milk, 1/2 and 1/2 or heavy whipping cream- this is optional)

  • Finely diced veggies of choice

  • 1/2 to 1 cup of meat (cook ahead of time- I used bacon and sausage)

  • 1/2 tsp. garlic powder

  • 1/2 tsp. onion powder

  • 1/2 tsp. baking powder

  • 2 tbsp. butter

  • Pinch of sea salt

  • Pinch of pepper

  1. Preheat oven to 350.

  2. Saute diced veggies in 1 tbsp. of butter until they are soft. Season veggies with garlic and onion powder, salt and pepper. Set aside to cool.

  3. Crack eggs into a mixing bowl. Add baking powder and cream. Using an electric mixer, beat until light and fluffy.

  4. Stir in cooked veggies, meat and cheese.

  5. Melt 1 tbsp. of butter in a cast iron skillet or round baking dish.

  6. Pour in egg mixture.

  7. Bake until eggs are set- about 25 minutes.

  8. Optional: serve with sliced avocado, salsa, green onions and/or sour cream.
