Breakfast Meatballs

Prep now and grab and go later!


Makes approximately 20 meatballs


Ingredients:

  • 1 lb. ground sausage, preferably no additives, MSG or corn syrup added (my favorite is this kind)

  • 1 cup shredded cheddar cheese

  • 1 tsp. garlic powder

  • 1 tsp. onion powder

  • 3 eggs, beaten

  • 1/3 cup coconut flour


  1. Preheat oven to 350.

  2. Cook the sausage. Drain any grease. Let cool completely.

  3. Stir cheese, seasonings and eggs with the sausage.

  4. Stir in coconut flour.

  5. Let sit 5 minutes to thicken.

  6. Form the mixture into meatballs.

  7. Bake on parchment paper for 20 minutes.

  8. Store in fridge for up to a week.
