It's not actual jam- but it's a perfect concoction of a touch of sweet and salty! Makes a great topping for burgers, fried eggs or to eat alone!
Ingredients:
1 package of bacon (preferably nitrate free), strips cut into very small chunks
1 sweet white onion, finely chopped
1 Tbsp. butter
3 Tbsp. worcestershire sauce
1 Tbsp. erythritol (I used this)
1/2 tsp. garlic power
1/2 tsp. onion powder
Pinch of black pepper
Heat the butter in a skillet on medium heat. Once melted, add the chopped onions.
Cook the onions until translucent. Add the bits of raw bacon to the skillet.
Continue to fry on medium heat until the bacon is about half-way done.
Reduce the heat to low and add remaining ingredients. Stir well.
Cook the mixture on low heat for about 30 minutes, stirring every few minutes. You want it to reduce down, create a glaze and allow the onions to caramelize and bacon to crisp up.
Serve immediately or let it cool and store in fridge for up to a week. Just reheat when it's time to eat!
