French Onion Soup

Ingredients:

  • 1/2 cup butter

  • 5 small white onions, or 2-3 large ones

  • 3 Tbsp. Worcestershire sauce

  • 4 cups beef broth

  • 2 bay leaves

  • 3 tsp. sea salt

  • 1/2 tsp. pepper

  • 1 tsp. minced garlic

  • 1/4 tsp. thyme

  • Shredded white cheese of choice (I used a Swiss and Gruyere blend)

  1. Begin melting the butter in a large fry pan. Thinly slice the onions into strips.

  2. Place all the sliced onions into the melted butter. Add the Worcestershire sauce.

  3. Simmer this mixture for 30 minutes on medium heat to caramelize the onions. Stir occasionally.

  4. Once it's all done, put the onions and all remaining ingredients in a crock pot.

  5. Cook on low for 4-6 hours. Remove bay leaves.

  6. Transfer a serving of the soup into an oven safe ramekin. Sprinkle a handful of cheese on top.

  7. Broil on low until cheese is browned and bubbly.

  8. Enjoy!
