Chocolate Drizzled Coconut Blondies

A coconut lovers dream!
Ingredients:
- 1/3 cup coconut oil 
- 1/4 cup coconut cream (from a can- use the leftover liquid to make chia pudding!) 
- 1 tsp. vanilla extract 
- 1 tsp. almond extract 
- 3 eggs 
- 1/2 cup powdered erythritol 
- 1/2 cup coconut flour 
- 1 tsp. baking powder 
- pinch of salt 
- 1/4 cup unsweetened shredded coconut 
- 1/4 cup sugar-free chocolate chips 
- 1 tsp. coconut oil 
- Preheat the oven to 350. 
- Melt the coconut oil and coconut cream in microwave for about 40 seconds. 
- Add the vanilla extract, almond extract and powdered erythritol. Beat well. 
- Add the eggs, beat well again. 
- Beat in the coconut flour, baking powder and pinch of salt. 
- Fold in the shredded coconut. 
- Pour into an 8x8 baking pan (lined with parchment paper or sprayed with non-stick spray) and press down until smooth. 
- Bake for 20 minutes, or until the edges are golden brown and toothpick comes out clean. 
- Melt the chocolate chips and coconut oil. Stir well. Drizzle over blondies. 
- Let completely cool and store in fridge. As it chills, the bars will set even more.
