A coconut lovers dream!
Ingredients:
1/3 cup coconut oil
1/4 cup coconut cream (from a can- use the leftover liquid to make chia pudding!)
1 tsp. vanilla extract
1 tsp. almond extract
3 eggs
1/2 cup powdered erythritol
1/2 cup coconut flour
1 tsp. baking powder
pinch of salt
1/4 cup unsweetened shredded coconut
1/4 cup sugar-free chocolate chips
1 tsp. coconut oil
Preheat the oven to 350.
Melt the coconut oil and coconut cream in microwave for about 40 seconds.
Add the vanilla extract, almond extract and powdered erythritol. Beat well.
Add the eggs, beat well again.
Beat in the coconut flour, baking powder and pinch of salt.
Fold in the shredded coconut.
Pour into an 8x8 baking pan (lined with parchment paper or sprayed with non-stick spray) and press down until smooth.
Bake for 20 minutes, or until the edges are golden brown and toothpick comes out clean.
Melt the chocolate chips and coconut oil. Stir well. Drizzle over blondies.
Let completely cool and store in fridge. As it chills, the bars will set even more.
